Easy Bake Cheesecake Recipe
This is the easiest no-bake cheesecake recipe I have come across.
I love cheesecake, my husband loves cheesecake, my children think cheesecake is weird as it is cake with cheese in…little do they know.

This cheesecake is a no bake cheesecake recipe and very easy to make using limes to help the cake set.
The Easy Bake Cheesecake Recipe:
- 250g Creme Fraiche (Cultured Cream)
- 250ml Cream (whipping cream or double cream)
- Grated lime rind
- Juice of 4 Limes
- 2 tablespoons of castor sugar
- Packet of tennis biscuits
- Butter for biscuit base
Method:
Break up the tennis biscuits into fine crumbs and mix in the melted butter. You don’t need a machine – put the biscuits in a packet and bash them with a rolling pin.
Place biscuits in a pie/serving base and place in the freezer while you make the filling.
Whip the cream in a chilled bowl and place back into the fridge
Squeeze and grate the limes.
Mix the creme fraiche, limes, sugar together and fold in the cream. Taste the mixture to see if there is a good balance of lime and sugar. Adjust lime taste accordingly.
Pour the mixture into the base and place in the fridge.
The limes help the cheesecake set so don’t leave mixture in the mixing bowl for too long.
Let set overnight or make it first thing in the morning and let it set over the day.
